This recipes works equally well with other stone fruit like peaches or nectarines. I bet it would taste good with pears but I haven't tried that yet.

    Ingredients
    Serves: 8

    • 1/2 cup (60g) wholemeal flour
    • 1/2 cup (60g) plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 125g butter, softened
    • 3/4 cup (170g) white sugar
    • 2 eggs
    • 3 plums, pitted and sliced
    • 1 tablespoon white sugar, or as needed
    • 1 teaspoon cinnamon

    Directions
    Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min

    1. Preheat oven to 180 degrees C. Spray a 20x30cm baking dish with cooking spray.
    2. Whisk together the wholemeal flour, plain flour, baking powder and salt in a bowl. Cream together the butter and 3/4 cup of sugar in a large bowl; mix in eggs, one at a time, beating well after each addition. Stir the flour mixture into the wet ingredients in two additions, mixing gently between each addition until the batter is just combined. Pour the batter into the prepared baking dish and arrange the sliced plums over the batter. Sprinkle the fruit with 1 tablespoon sugar and dust with cinnamon.
    3. Bake in the preheated oven until a toothpick inserted into the centre of the cake comes out clean, 50 to 55 minutes.

I MAKE THIS WAY TOO OFTEN. It's SO good that it's almost addicting! A great way to use leftover plums. 1 cup of all-purpose flour is fine if you don't have whole wheat - it worked for me! I tried this with gala apples, but the apples came out pretty dry, shriveled and flavorless. Will experiment with other apples. I tried this with nectarines too - delicious! I dipped each nectarine slice in some honey before I placed them on the dough then added the cinnamon and sugar. They came out beautifully golden and sweet!  -  23 Nov 2011  (Review from Allrecipes USA and Canada)

Was very simple to make. Only change I made was using 1 cup all-purpose flour since I don't have whole wheat flour on hand. The only negative was that the flavor wasn't as sweet as I was hoping. Maybe more sugar would make it better? Took a picture as well and will add that to the recipe.  -  23 Aug 2011  (Review from Allrecipes USA and Canada)
