Easy Eggless Orange Cake

    Sometimes all you want is a simple cake! Feel free to decorate it as you wish but I like it as is with a cup of tea.

    Serves: 16 

    • 2 1/2 cups (315g) plain flour
    • 2 teaspoons baking powder
    • 1 teaspoon bicarb soda
    • 400g sweetened condensed milk
    • 1 cup (250ml) orange juice
    • 2 teaspoons vanilla essence
    • 250g melted butter

    Preparation:30min  ›  Cook:30min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease and flour a 20x30cm pan.
    2. Sift together the flour, baking powder and bicarb soda into a large bowl. Make a well in the centre and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
    3. Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.

    First made the cake per recipe. It was delicious, but a little heavy. Second time, used cake flour, increased vanilla extract to 1 tablespoon, and added 2 tablespoons white vinegar. Wow! No one can tell this is an eggless cake! My grandson is allergic to eggs, but can have his cake and eat it too!  -  11 Mar 2007  (Review from Allrecipes USA and Canada)
