Giant Chocolate Chip Biscuit

    This is a great idea for serving at a birthday party: a big chocolate chip cookie served in slices like a pizza!

    Serves: 24 

    • 250g butter, softened
    • 3/4 cup (170g) white sugar
    • 3/4 cup (120g) brown sugar
    • 250g packet cream cheese
    • 1 teaspoon vanilla essence
    • 2 eggs
    • 2 1/4 cups (300g) plain flour
    • 1 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 2 cups dark chocolate chips
    • 1 cup (150g) chopped walnuts

    1. Preheat oven to 190 degrees C. Lightly grease two 30cm pizza pans.
    2. In a medium bowl cream together the butter, brown sugar and white sugar until smooth. Beat in the cream cheese, then the eggs one at a time, then stir in the vanilla. Combine the flour, bicarb soda and salt; gradually stir into the creamed mixture. Fold in the chocolate chips and walnuts. Divide the dough in half and press each half onto a prepared pizza pan.
    3. Bake for 20 to 25 minutes in the preheated oven until golden at the edges. Cool completely in pans on wire racks. Cut into slices like a pizza and serve.

    Good recipe; I cut it in half for only one pizza pan. This made a nice cakey cookie. I think it needed double the salt to bring out more flavor. My son doesn't like cakey cookies, so he wouldn't eat this.  -  28 May 2011  (Review from Allrecipes USA and Canada)
