Pineapple Muffins

    These pineapple muffins are very moist and very sweet. Sometimes I add a little desiccated coconut to the mix.

    Serves: 12 

    • 125g butter, softened
    • 1 cup (220g) white sugar
    • 1 egg
    • 250g tinned crushed pineapple
    • 2 cups (250g) plain flour
    • 1/2 teaspoon salt
    • 1/2 teaspoon bicarb soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon

    1. Preheat oven to 180 degrees C. Grease muffin cups or line with patty cups.
    2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the egg; beat well. Stir in the crushed pineapple and its juice. In a large mixing bowl, mix together the flour, salt, bicarb soda, baking powder and cinnamon. Add this mixture to the pineapple mixture; stir well. Scoop batter into prepared muffin cups.
    3. Bake 180 degrees C for 20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean. Cool for 10 minutes in the pan before removing to a wire rack to cool completely.

    nice and easy and liked by the whole family. My mix made 12 mini muffins 12 good sized muffins. Almost did not last long enough to get a picture of  -  15 Oct 2012
