    This is a very moist and yummy cake and extremely easy to make. It's even better with cream cheese icing.

    Serves: 12 

    • 2 cups (250g) plain flour
    • 2 cups (220g) white sugar
    • 1 teaspoon bicarb soda
    • 2 eggs, beaten
    • 1 (450g) tin crushed pineapple, with juice
    • 1 teaspoon vanilla essence
    • 1 cup chopped pecans

    1. Preheat oven to 180 degrees C. Grease and flour a 20x30cm baking pan.
    2. Sift together the flour, sugar and bicarb soda. Stir in the eggs, pineapple and vanilla, mixing until blended. Fold in pecans. Pour batter into prepared pan.
    3. Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Allow to cool.
