Strawberry and Spinach Salad

    This is a great sweet and salty salad with strawberries, spinach and candied walnuts. Be careful not to overdo the onion. Do not toss until ready to eat.

    Serves: 6 

    • 350g baby spinach leaves
    • 1 cup sliced fresh strawberries
    • 1/4 small red onion, sliced thin
    • 2 cups (185g) candied walnuts
    • 3 tablespoons extra-virgin olive oil
    • 1 1/2 tablespoons balsamic vinegar
    • 125g crumbled feta

    1. Combine the spinach, strawberries, onion and walnuts in a large bowl. Drizzle the olive oil and balsamic vinegar over the mixture and toss to coat evenly. Add the feta cheese and re-toss to combine.

    Delicious and so easy! I've used the sliced onion or chopped scallions in the past, and have subbed goat cheese for the feta but I pretty much love this salad no matter what small changes I've made.
