Dutch Funny Cake

    This is a Pennsylvania Dutch recipe called 'funny cake' because the chocolate layer sinks through the cake layer while baking.

    Serves: 36 

    • 3 (20cm) unbaked pie shells
    • 1 cup (220g) white sugar
    • 1/2 cup unsweetened cocoa powder
    • 3/4 cup (190ml) water
    • 1 teaspoon vanilla essence
    • 1 1/2 cups (330g) white sugar
    • 125g butter
    • 2 eggs
    • 1 cup (250ml) milk
    • 2 teaspoons baking powder
    • 1 teaspoon vanilla essence
    • 2 1/2 cups (315g) plain flour

    1. Combine 1 cup sugar, cocoa, water and 1 teaspoon vanilla in a saucepan. Heat over medium-low heat to the boiling point, but do not boil. Set aside.
    2. In a large bowl, cream together 1 1/2 cup sugar and butter. Beat in eggs. Stir in milk and 1 teaspoon vanilla. Combine flour and baking powder; mix into the creamed mixture. Divide batter into the pastry shells. Pour 1/3 of the cocoa mixture on top of the cake batter in each pastry shell.
    3. Bake at 180 degrees C for 25 to 35 minutes, or till set.

    Even though I carefully followed the recipe to the letter, my cakes turned out dense, dry, and not very flavorful. The chocolate layer doesn't sink to the bottom as claimed, it remains as a thin layer at the top and drips down along sides of the crust.
