Penne with Capsicums

    A simple and summery vegetable pasta. Garnish with fresh basil and Parmesan cheese to add some extra zest.

    Serves: 5 

    • 500g penne
    • 2 tablespoons olive oil
    • 2 red onions, cut into strips
    • 2 cloves garlic, chopped
    • 3 red capsicums, chopped
    • 2 yellow capsicum, chopped

    1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and reserve.
    2. Heat oil in a large frypan over medium heat. Add onion, garlic, red capsicums and yellow capsicums and saute for 10 minutes or until tender. Pour this vegetable mixture over cooked pasta and serve.

    Good basics, but I used 1 each green, red and yellow pepper. I added a small can of stewed tomatoes after the peppers and onion sauteed, and then tossed the cooked pasta into the same pan to let it absorb the olive oil flavor a bit.     This dish could use more flavor. I added red chili flakes and lots of salt and pepper, and I used one each of red, yellow, and orange bell peppers. I found the pasta itself to be a bit dry (I used whole wheat), so I think next time I'll add some tomatoes or spaghetti sauce.  -  08 Oct 2008  (Review from Allrecipes USA and Canada)
