    This pasta dish is quick but elegant. The spiciness of the sauce can easily be adjusted as well, as the flavour is wonderful either mild or hot.

    Ingredients
    Serves: 8 

    • 375g pork sausages, sliced
    • 500g penne
    • 500g tinned diced tomatoes, drained
    • 2 tablespoons dried basil
    • 2 tablespoons dried parsley
    • chilli flakes to taste
    • salt to taste
    • 2 teaspoons crushed garlic
    • 125g mushrooms
    • 1 (800g) jar pasta sauce with mushrooms
    • 1 tablespoon grated Parmesan cheese

    Directions
    Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Place sausage slices in a large, deep frypan. Cook over medium high heat until evenly brown. Drain and return to pan.
    2. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    3. To the sausage slices add the tomatoes, basil, parsley, chilli flakes, salt and garlic. Stir in mushrooms and pasta sauce. Bring to a boil then reduce heat to medium-low. Stir in cooked pasta and top with Parmesan cheese.

    Delicious combination that we have used in our household for years. I substituted homemade sauce for jar sauce and used spicy chicken sausage to cut down on the fat.  -  21 Aug 2008  (Review from Allrecipes USA and Canada)

    This is a good recipe. I used a pound of ground mild sausage because that is what I had on hand. I only used a teaspoon of the basil because I ran out. I think that was plenty. More than that would be overwhelming. Next time I won't add as much parsley. Other than that it was a great recipe that I will make again.
