Easy Cinnamon Peach Cake

This is a lovely cake recipe and looks very nice when it is done! I've made it with both fresh and canned peaches.


Serves: 12 

  • 125g butter
  • 1/4 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 cup (125g) plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 800g tinned sliced peaches, drained
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Preheat oven to 180 degrees C. Grease and flour a 23cm springform pan. Sift together the flour, baking powder and salt. Set aside.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg then stir in the vanilla. Beat in the flour mixture. Spread dough with hands over the bottom and 3cm up the sides of the springform pan. Arrange peach slices in a spoke pattern over the dough. Sprinkle with sugar and cinnamon.
  3. Bake in the preheated oven for 35 to 40 minutes, or until golden brown.
