Pasta with Tequila Lime Sauce

Fish stock adds a nice salty bite to this easy pasta dish, and lime juice adds brightness. A very easy weeknight meal.


Serves: 2 

  • 1 tablespoon butter
  • 1/2 onion, chopped
  • 2 cloves garlic, thinly sliced
  • 1 pinch chilli flakes
  • 1 (400g) tin diced tomatoes, undrained
  • 1 1/2 tablespoons tequila
  • 1/4 cup (65ml) water
  • 250ml fish stock
  • 125g macaroni
  • 1 lime, juiced

  1. Melt butter in a large frypan over medium heat. Stir in onion, garlic and chilli flakes; cook until onion is soft and translucent. Stir in tomatoes, tequila, water and fish stock. Bring to a boil then add macaroni. Cover and simmer, stirring frequently, until pasta is tender, about 10 minutes. Remove from heat and stir in lime juice.
