The healthiest pasta salad you will ever make! Fresh crispy vegetables tossed with fusilli and a mayonnaise dressing.


Serves: 6 

  • 3 cups fusilli pasta
  • 3/4 cup broccoli florets
  • 3/4 cup cauliflower florets
  • 1/2 cup red onion, sliced
  • 1/2 cup thinly sliced carrots
  • 1/2 cup red capsicum, chopped
  • 1/2 cup chopped green capsicum
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped celery
  • 3/4 cup light mayonnaise
  • 1/4 cup (65ml) distilled white vinegar
  • 1/4 cup white sugar
  • salt and pepper to taste

  1. Cook pasta according to packet directions. Drain and rinse pasta under cold water.
  2. Place pasta in a large serving bowl, add the all the vegetables and toss to combine.
  3. Combine the mayonnaise, vinegar and sugar together, whisk until smooth. Pour over salad and mix well. Season to taste with salt and pepper and serve.
