    Pasta served the Italian style with a simple sauce of strong flavours. I find angel hair pasta works best with this recipe.

    Ingredients
    Serves: 4 

    • 5 tablespoons olive oil
    • 4 cloves garlic, minced
    • 1 onion, chopped
    • 4 roma (plum) tomatoes, diced
    • 1/2 teaspoon dried oregano
    • 1/2 teaspoon dried basil
    • salt and pepper to taste
    • 500g angel hair pasta

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. In a medium frypan over medium-high heat, saute garlic in oil 1 to 2 minutes. Stir in onion and cook 2 minutes more. Stir in tomatoes, oregano, basil, salt and pepper. Reduce heat to medium-low and let simmer.
    2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 3 to 5 minutes or until al dente; drain.
    3. Toss hot pasta with tomato mixture. Serve.

    I made some slight changes, but this turned out beautifully! Used less Angel Hair. 2 Tbs Olive Oil, and sauteed some minced garlic, red onion and a full can of (Drained) diced tomatoes with garlic, oregano and basil. Spiced it up with some Penzey's Pasta Sprinkle (oregano / thyme & basil), S&P, red pepper flakes, and parsley. Tossed over the noodles and topped with a bit of Parmesan. Couldn't believe the tomato-hating husband was eating - AND LOVING - it! Adding this to rotation.  -  24 Mar 2008  (Review from Allrecipes USA and Canada)

    To add more flavor, roast the tomatoes, add a few shakes of crushed red pepper, add a tablespoon of lightly crushed fennel seed, and definitely add parmesan cheese!  -  23 Apr 2008  (Review from Allrecipes USA and Canada)

    I made the recipe as is but after tasting it, I added a little more EVOO, a half teaspoon more of oregano and basil and a half teaspoon of crushed red pepper flake.
