Penna Lasagne

    I call this lasagne even though I use penne pasta. It's a delicious mix of three cheeses and beef, very easy to make.

    Ingredients
    Serves: 5 

    • 250g penne pasta
    • 250g lean beef mince
    • 1 (700g) jar pasta sauce
    • 450g ricotta
    • 250g grated mozzarella, divided
    • 1/4 cup grated Parmesan cheese
    • 1 egg, beaten

    Directions
    Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease a 2 litre baking dish.
    2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
    3. In a large frypan over medium heat, cook beef until brown; drain. Stir in pasta sauce; remove from heat.
    4. In a bowl, combine ricotta, mozzarella, Parmesan and beaten egg. Stir until well combined.
    5. In the prepared dish layer half the pasta, half the sauce and half the cheese mixture. Repeat. Top with remaining mozzarella.
    6. Bake in preheated oven 35 to 40 minutes, until hot and bubbly.

    Very good and much easier than messing with lasagna noodles. The whole family asked me to put this in the rotation. I used double the noodles and mozzarella cheese. I also used cottage cheese instead of ricotta. I also added a little more sauce.     I love this recipe. It is one of my go-to meals during the week. It has the same great taste as lasagna but you don't have to mess with the difficult lasagna noodles. I up the meat and pasta to a pound each, add a little more sauce and mozzarella and cook it in a 13X9 pan. Delicious!!  -  14 Oct 2007  (Review from Allrecipes USA and Canada)
