Matzo Apple Slice

    Beautiful apple squares using ground matzos instead of flour. Perfect for Passover if you eat peanut oil.

    Makes: 9 slices

    • 1 cup matzo meal
    • 1 cup sugar
    • 1 tablespoons mixed spice
    • 1/2 teaspoon salt
    • 3 eggs, separated, whites whisked stiffly
    • 1/2 cup peanut oil
    • 1 lemon, zested and juiced
    • 2 apples, peeled, cored and sliced

    1. Preheat an oven to 190 degrees C. Grease an 20cm square cake tin.
    2. Combine matzo meal, sugar, mixed spice and salt in a large bowl. Beat in egg yolks, peanut oil, lemon juice and lemon zest. Fold in the egg whites.
    3. Pour half of the batter into the prepared cake tin. Cover the batter with apple slices then pour the remaining batter on top.
    4. Bake in the preheated oven until a toothpick inserted into the centre comes out clean, about 45 minutes.
    5. Cool in the cake tin for 10 minutes before removing to cool completely on a wire rack. Slice into 9 pieces to serve.
