One Pot Broccoli Pasta

I live alone and this is a quick and easy way to make a tasty dinner. Pasta is served with broccoli, olives and garlic oil.

Serves: 6 

  • 500g penne pasta
  • 4 cloves garlic, minced
  • 3/4 cup (190ml) olive oil
  • 1 large head fresh broccoli, chopped and blanched
  • 185g sliced black olives

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Cook pasta in large pot with boiling salted water until al dente. Drain well.
  2. In a medium frypan over medium heat cook garlic in olive oil, being careful not to allow garlic to burn.
  3. In a large bowl add the cooked broccoli, cooked and drained pasta and black olives.
  4. To serve, pour garlic oil over pasta and vegetables. Serve warm.
