One Step Chocolate Cake

    This is one of the easiest chocolate cakes ever to make. Just mix all the ingredients in a mixer bowl and bake! Minimal cleanup.

    Serves: 24 

    • 2 cups (440g) white sugar
    • 1 3/4 cups (220g) plain flour
    • 3/4 cup unsweetened cocoa powder
    • 1 1/2 teaspoons baking powder
    • 1 1/2 teaspoons bicarb soda
    • 1 teaspoon salt
    • 2 eggs
    • 1 cup (250ml) milk
    • 1/2 cup (125ml) vegetable oil
    • 2 teaspoons vanilla essence
    • 1 cup (205ml) boiling water

    1. Preheat oven to 180 degrees C. Grease and flour two 20cm round tins.
    2. In a large bowl, combine sugar, flour, cocoa, baking powder, bicarb soda and salt. Make a well in the centre and add eggs, milk, oil and vanilla. Beat for 2 minutes at medium speed. Stir in boiling water.
    3. Pour into cake tins. Bake at 180 degrees C for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Cool for 10 minutes in the pan, then turn out onto a wire rack and continue cooling.

    I have been baking cakes for over 60 years, and this is without doubt the easiest and best chocolate cake I have ever made..dense, moist and lasts wel l(if husband and grandkids let it!) The only revision I made was to increase the cocoa to 1 cup for a slightly denser chocolate taste.  -  03 Jan 2014
