Preheat oven to 180 degrees C. Grease and flour two 20cm round tins.
In a large bowl, combine sugar, flour, cocoa, baking powder, bicarb soda and salt. Make a well in the centre and add eggs, milk, oil and vanilla. Beat for 2 minutes at medium speed. Stir in boiling water.
Pour into cake tins. Bake at 180 degrees C for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Cool for 10 minutes in the pan, then turn out onto a wire rack and continue cooling.
I have been baking cakes for over 60 years, and this is without doubt the easiest and best chocolate cake I have ever made..dense, moist and lasts wel l(if husband and grandkids let it!) The only revision I made was to increase the cocoa to 1 cup for a slightly denser chocolate taste. - 03 Jan 2014
I first made this for my daughters 5th birthday... we have since made it for a number of friends children's birthdays and we have used it to make character shaped cakes... very easy, moist and versatile cake ever... :D :D - 17 Aug 2013
