Walnut Date Biscuits

    The combination of walnuts and dates is perfect for me. These biscuits are my favourite and very easy to make.

    Serves: 24 

    • 2 cups (250g) plain flour
    • 1 teaspoon baking powder
    • 3/4 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 1 cup (150g) packed brown sugar
    • 250g copha
    • 3 eggs
    • 1/2 cup (110g) white sugar
    • 1 teaspoon vanilla essence
    • 2 cups (300g) quick cooking oats
    • 1 cup dates, pitted and chopped
    • 1/2 cup (75g) chopped walnuts

    1. Preheat oven to 180 degrees C and grease baking trays.
    2. In separate bowl sift together flour, baking powder, bicarb soda and salt. Set aside.
    3. In a large bowl, cream together copha and both sugars until light and fluffy, using an electric mixer at medium speed.
    4. Add eggs, one at a time, beating well after each. Blend in vanilla.
    5. Gradually add dry ingredients to creamed mixture, mixing well with spoon.
    6. Stir in oats, dates and walnuts.
    7. Drop dough by teaspoonfuls, about 5cm apart, on baking tray.
    8. Bake for 8 minutes or until lightly browned. Remove from baking trays to cool on racks.

    As I'm getting ready to make a triple batch of this for Christmas, I figured I ought to rate it! I downloaded this a couple years ago, and have been using it ever since. My mom doesn't want any other kind of cookie! She doesn't like chocolate so it makes it hard to find something she likes. The recipe is very easy to make, the cookies freeze well. And they are very, very tasty! The dates make it a nicer cookie than raisins, which can be a little tart or bitter sometimes.     This is a delicious cookie recipe. I've made these cookies twice in the last two weeks because they disappear so quickly. The only change I made was to add an additional half cup of dates.
