Okra and Capsicum

    A very simple vegetable side dish which my family loves. Okra is simmered with capsicum and onion in bacon drippings.

    Serves: 7 

    • 2 rashers bacon
    • 500g okra, sliced
    • 1 small onion, chopped
    • 1/2 green capsicum, chopped
    • 2 stalks celery, chopped
    • 400g can chopped tomatoes
    • salt and freshly ground black pepper to taste

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Place bacon in a large, deep frying pan. Cook over medium high heat until browned. Drain, chop and set aside.
    2. Add okra to bacon drippings in the pan with onion, capsicum and celery and cook until tender. Add tomatoes, salt and pepper and cook until well blended. Stir in bacon.

    Used different ingredients. I thought this was very good - I had to add several seasonings to make it just right, or I would have given it 5 stars. I added fresh parsely, garlic, pepper, salt and a pinch of chilli powder. However, I will definitely be making this again. I served it over brown rice with a fried egg, and it was delicious.     Something else. I've made this a couple of times now. The first time I followed the recipe and it turned out great. The second time, I found I didn't have any tinned tomatos, but I had a few fresh plum tomatoes, so I diced those and added a little tomato puree and water. It still turned out perfect. Every one at my house loves it either way. This is one of those recipes that's just really hard to mess up. Thanks for posting a great recipe!  -  29 Sep 2008


    Altered ingredient amounts. Great recipe. I omitted the celery since we didn't have any. I liked as well as my husband.  -  29 Sep 2008
