These are really delicious and chewy caramel oatmeal bars. Substitute white chocolate chips if you prefer.

    Ingredients
    Serves: 18

    • 440g individually wrapped caramels
    • 3 tablespoons milk
    • 190g margarine
    • 1 cup (125g) plain flour
    • 1 cup (150g) rolled oats
    • 3/4 cup (125g) packed brown sugar
    • 1/2 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 1 cup dark chocolate chips

    Directions
    Preparation:25min  ›  Cook:20min  ›  Ready in:45min

    1. Preheat oven to 180 degrees C.
    2. Peel the plastic wrapping from the caramels and melt them in a saucepan over medium heat along with the milk. (If using a microwave, use a large, microwave-safe bowl, melt the caramels and milk in the microwave at medium power for 2 to 3 minutes, checking every 20 to 30 seconds.) Stir and set aside.
    3. Melt the margarine and combine with flour, oats, brown sugar, bicarb soda and salt.
    4. Press slightly more than half the oat mixture into a greased 20x30cm pan. Sprinkle chocolate chips on top of the mixture, then pour the caramel over the chips. Top with remaining oat mixture.
    5. Bake for 20 minutes; cool. Cut into bars.

This is nearly identical to one of my favorite dessert recipes. My technique is a little different, but the basic idea is the same--and really delicious! I spread about 2/3 of the oat mixture in the pan, bake for 12 minutes, then cover with the caramel and a mixture of the leftover oats and the chocolate chips before baking another 15 minutes. This gives a nice firm base to the bar, and a gooey blended top layer! Yum!  -  14 Oct 2004  (Review from Allrecipes USA and Canada)

These are excellent! Something to make the recipe even easier is to substitute caramel sauce for the wrapped caramels (omit milk, too!). They turned out just as delicious with this change. I also double the oatmeal base as it is much better with a thicker bottom.  -  05 Apr 2006  (Review from Allrecipes USA and Canada)

I brought these bar cookies into work and everyone raved about them. At least ten people asked for the recipe. It was very easy to make and assemble.  -  21 Dec 2001  (Review from Allrecipes USA and Canada)
