Apple and Oat Muffins

    Perfect if you like a little less sweet muffin, the sugar in this recipe comes from apple puree and is also packed with healthy grains.

    Serves: 12 

    • 1 cup rolled oats
    • 1 cup buttermilk
    • 1 cup wholemeal plain flour
    • 1 teaspoon baking powder
    • 1 teaspoon bicarb soda
    • 1/2 cup soft dark brown sugar
    • 1/2 cup apple sauce or purée
    • 1 egg

    1. Place oats and buttermilk in a bowl, stir and leave for two hours at room temperature.
    2. Preheat oven to 190 degrees C. Grease muffin tin or line with paper patty cups.
    3. In a large bowl, stir together wholemeal flour, baking powder, bicarb soda and brown sugar. Stir in oat-buttermilk mixture, apple sauce and egg. Mix well and fill into muffin cups.
    4. Bake for 30 minutes or until a skewer inserted into centre of muffin comes out clean.

    Used different ingredients. These are great and very low calorie! The first time I made them I used quick oats and soaked them for an hour, which made them completely unnoticeable. My husband was disappointed that they weren’t more “oaty". So the next time I used old-fashioned oats and only soaked them as long as it took me to get the rest of the ingredients together (about half an hour) which gave them a chewier texture and an “oaty” flavour he really likes. As suggested by other reviewers I added spices- 2 teaspoons cinnamon, 3/4 teaspoon salt, and 1 teaspoon of vanilla. The supermarket didnt have buttermilk so I used regular with a Tablespoon of vinegar. They turned out wonderfully.  -  29 Sep 2008


    Used different ingredients. These muffins were really good. I did add cinnamon and raisens to mine and before baking I did sprinkle a little bit of cinnamon and sugar on top. My co-workers liked them as well as my kids.  -  29 Sep 2008


    Once I got used to the lack of sweetness in these muffins, I really started to enjoy them. Very easy and fast recipe, and the muffins come out fluffy and moist. As per the suggested tweaks, I added some spice to give them a bit more of a zing - cinnamon and nutmeg in my case. Great for breakfast on the go.  -  02 Jan 2010
