Lovely rich and chewy walnut bars, very easy to make and perfect for holidays and picnics. My kids love them.

    Serves: 12

    • 2 eggs
    • 1 teaspoon vanilla essence
    • 1/4 teaspoon bicarb soda
    • 1/3 cup (40g) plain flour
    • 2 tablespoons butter
    • 1/4 teaspoon salt
    • 1 cup (125g) chopped walnuts
    • 1 cup (150g) packed brown sugar
    • 1/3 cup (60g) icing sugar for decoration

    Preparation:20min  ›  Cook:25min  ›  Ready in:45min

    1. Preheat oven to 180 degrees C.
    2. Beat eggs and vanilla together in mixing bowl. Add in brown sugar, flour, bicarb soda, salt and walnuts. Mix until well blended.
    3. Melt the butter in a 20cm square pan. Pour the batter into the pan and bake for 20 to 25 minutes, until firm to the touch.
    4. While bars are still hot, loosen with a spatula and turn out onto greaseproof paper, buttered side up. Dust with icing sugar while warm and cut into squares.

Excellent! Only I substituted chocolate chips for the walnuts because the kids don't like nuts! Everyone RAVED about them!  -  03 Oct 2006  (Review from Allrecipes USA and Canada)

Easy to make and very yummy! This is going in my holiday treat recipe book!  -  16 Dec 2010  (Review from Allrecipes USA and Canada)

Are you supposed to be able to get the bars out of the pan before cutting them? That's what I tried… I had trouble with that and my single baked cookie broke into about 5 pieces. Luckily they were still warm and I could stick them back together. And confectioners sugar, I learned, covers up a bunch of imperfections. Gave it 4 stars because despite all the trouble, they still tasted great!  -  24 Nov 2009  (Review from Allrecipes USA and Canada)
