Easy Walnut Rum Balls

    These are delicious little rum balls coated in icing sugar. Very rich and great for holidays or as gifts.

    Serves: 36 

    • 2 1/2 cups crushed vanilla wafers
    • 1 cup (150g) icing sugar
    • 2 tablespoons cocoa powder
    • 1 cup (125g) chopped walnuts
    • 3 tablespoons dark golden syrup
    • 1/4 cup (65ml) rum

    1. In a medium sized bowl, mix together the vanilla wafers, cocoa and sugar. Stir in the chopped walnuts, golden syrup and rum. Mix until well blended.
    2. Form dough into 5cm balls and roll in icing sugar. Store in covered tin.

    I substituted sweetened condensed milk instead of corn syrup in this recipe, and rolled the rum balls in hundreds and thosands, coconut and crushed peanuts.
