    I get a lot of requests for the recipe and I'm a little ashamed it isn't more complex. This is baked sour cream cheesecake at it's best and simplest.

    Serves: 16 

    • 1kg cream cheese
    • 3/4 cup (185g) white sugar
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 tablespoons cornflour
    • 1 cup sour cream
    • 1 1/2 cups sweet digestive biscuit crumbs
    • 6 tablespoons melted butter
    • 1/4 cup (50g) white sugar

    1. Preheat oven to 200 degrees C.
    2. Mix biscuit crumbs, melted butter and 1/4 cup sugar together. Press mixture onto the bottom of one 23cm springform pan. Place in freezer for 10 minutes.
    3. Cream 3/4 cup of the sugar and cream cheese until smooth. Beat in eggs, vanilla and cornflour until just mixed. Stir in sour cream until blended. Pour into prepared crust.
    4. Bake for 45 minutes. Turn oven off and leave cake in oven with the door ajar for 3 hours. Serve with your favourite topping.
