Hot Cider (Wassail)

    This is the hot cider drink known as 'wassail,' traditionally drunk at Christmas and New Years. Be sure to toast "Be in good health" before your first sip.

    Serves: 36 

    • 2 1/2 cups (450g) caster sugar
    • 4 cups (1 litre) water
    • 2 cinnamon sticks
    • 8 whole allspice berries
    • 1 tablespoon whole cloves
    • 1 slice fresh ginger
    • 4 cups (1 litre) orange juice
    • 2 cups (500ml) lemon juice
    • 8 cups (2 litres) apple juice

    1. In a large saucepan over high heat, combine sugar and water. Boil for 5 minutes. Remove from heat and add cinnamon sticks, allspice berries, cloves and ginger. Cover and let stand in warm place for 1 hour.
    2. Strain liquid into a large saucepan. Just before serving, add juices and cider and quickly bring to the boil. Remove from heat and serve.

    Something else. The best! Try adding red wine... after this was finished simmering I put 1/2 in a pitcher for the kids, and added a whole bottle of cabernet to the rest for the adults. A real treat!  -  21 Jul 2008


    Altered ingredient amounts. Excellent Wassail. A friend of mine made some brilliant Wassail last year and This beat it!. I left out the Ginger and it was fantastic. We let everyone spike it with Rum themselves. Great easy recipe.  -  21 Jul 2008
