Hot Milk Sponge Cake

    Here is the basic sponge cake recipe you've been looking for. This recipe makes a cake that is very light and fluffy and it's no work at all.

    Serves: 14 

    • 2 cups (250g) plain flour
    • 2 teaspoons baking powder
    • 1 cup (250ml) milk
    • 4 eggs
    • 2 cups (400g) white sugar
    • 2 teaspoons vanilla essence

    1. Preheat oven to 180 degrees C.
    2. Sift together the flour and baking powder. Heat milk in a small saucepan until just boiling then remove from heat and set aside.
    3. Beat eggs until foamy then add sugar. Continue beating on medium-high speed until thick and lemon coloured. Add vanilla, reduce mixer speed to medium and add hot milk in a steady stream. Quickly beat in flour mixture.
    4. Pour into a prepared cake tin. Bake in the preheated oven 45 minutes, or until top springs back when lightly tapped.

    The final result is absolutely delicious, but after experimenting, I found that you only need one cup of sugar and a dribble-more of milk. Anymore and it's too sweet and a tad too dry.
