Beetroot Chocolate Cake

    It might seem like an odd combination but the deep earthy flavour of beetroot is the perfect complement to chocolate. It keeps the cake nice and moist too.

    Serves: 24 

    • 1 1/2 cups well-drained, mashed, cooked beetroot
    • 1/2 teaspoon vanilla essence
    • 1 1/2 cups (330g) white sugar
    • 1 cup (250ml) vegetable oil
    • 3 eggs
    • 1 3/4 cups (220g) plain flour
    • 1 1/2 teaspoons bicarb soda
    • 1/4 teaspoon salt
    • 6 tablespoons unsweetened cocoa powder

    1. Preheat oven to 180 degrees C. Grease and flour one 20x30cm pan.
    2. In a large bowl combine beetroot, eggs, vanilla, oil and sugar. Mix with an electric mixer on low speed until well combined.
    3. In a separate bowl mix together flour, soda, salt and cocoa. Add to the creamed mixture, beating together well. Pour batter into prepared pan.
    4. Bake for 25 to 30 minutes until done. Cool and ice with your favourite icing.
