Pork and Bean Casserole

    This is a very easy casserole to throw together out of leftover beans, macaroni, pork and seasonings. My family goes crazy for it!

    Serves: 8 

    • 1 cup leftover cooked borlotti beans
    • 1 cup leftover cooked macaroni
    • 1 cup leftover cooked pork mince
    • 1 large onion, chopped and sauteed
    • 440g tinned diced tomatoes
    • 1 teaspoon chopped fresh parsley
    • 1 teaspoon ground cayenne pepper
    • 1 tablespoon chopped garlic
    • salt and pepper to taste

    Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

    1. Preheat oven to 180 degrees C.
    2. In a large bowl combine the beans, macaroni, sausage, onion, tomatoes, parsley, cayenne pepper, garlic, salt and pepper. Mix well and spread mixture in a lightly greased 20x30cm baking dish.
    3. Bake for 1 hour.

    This recipe is easy, the flavors are right on, and has the potential to be delicious. I learned 4 things: (1) do check your diced tomatoes to be sure they aren't canned in balsamic vinegar - ew (2) large pasta, like penne, sticks out of the "sauce" and hardens (3) this would fit in a 9x9 and keep everything moist and (4) everything is already cooked, so the 1 hour cooking time dried it out. Next time I'll use smaller pasta, put it in a 9x9, and only cook for 30 minutes, topping it with cheese in the last few minutes.  -  02 Feb 2009  (Review from Allrecipes USA and Canada)
