This is a very easy casserole to throw together out of leftover beans, macaroni, pork and seasonings. My family goes crazy for it!

Serves: 8 

  • 1 cup leftover cooked borlotti beans
  • 1 cup leftover cooked macaroni
  • 1 cup leftover cooked pork mince
  • 1 large onion, chopped and sauteed
  • 440g tinned diced tomatoes
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon ground cayenne pepper
  • 1 tablespoon chopped garlic
  • salt and pepper to taste

Preparation:10min  ›  Cook:1hour  ›  Ready in:1hour10min 

  1. Preheat oven to 180 degrees C.
  2. In a large bowl combine the beans, macaroni, sausage, onion, tomatoes, parsley, cayenne pepper, garlic, salt and pepper. Mix well and spread mixture in a lightly greased 20x30cm baking dish.
  3. Bake for 1 hour.
