Cinnamon Waffle Biscuits (Pizzelles)

Pizzelle are a traditional Italian biscuit very similar to a krumkake. They require a special pizzelle iron but they are worth the investment!

  • 9 eggs
  • 2 1/2 cups (550g) white sugar
  • 4 teaspoons ground cinnamon
  • 3 tablespoons baking powder
  • 375g unsalted butter
  • 5 cups (625g) plain flour

  1. In a large bowl beat eggs, butter and sugar together. Stir in the flour, baking powder and cinnamon to form a sticky dough.
  2. Preheat the pizzelle iron. Drop cookie dough by rounded teaspoonfuls onto the hot iron, close the lid and cook for 1 to 2 minutes. Steam will stop coming out of the iron. Place biscuits on a wire rack to cool.
