Apple sauce makes for a deliciously moist and fruity cake. I love walnuts and raisins, but if you prefer you could substitute some other kind of nut such as chopped almonds.

    Ingredients
    Serves: 24

    • 2 1/2 cups (315g) plain flour
    • 1/4 teaspoon baking powder
    • 1 1/2 teaspoons bicarb soda
    • 1 1/2 teaspoons salt
    • 3/4 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon ground allspice
    • 125g copha
    • 1 cup (220g) white sugar
    • 1/2 cup (125ml) water
    • 1 egg
    • 1/2 cup chopped walnuts
    • 1 cup chopped raisins
    • 500g apple sauce
    • 250g cream cheese
    • 1 tablespoon milk
    • 1 teaspoon vanilla essence
    • 5 1/2 cups (800g) sifted icing sugar
    • 1/3 cup orange juice

    Directions
    Preparation:30min  ›  Cook:50min  ›  Ready in:1hour20min

    1. Preheat oven to 180 degrees C and grease and flour a 20x30cm pan.
    2. Sift together flour, baking powder, bicarb soda, salt, cinnamon, cloves and allspice. Set aside.
    3. In a large bowl, cream copha and sugar until light and fluffy. Mix in water and egg. Add flour mixture alternately with apple sauce and mix thoroughly. Fold in nuts and raisins.
    4. Pour into pan and bake for 45 to 50 minutes or until a toothpick inserted into center of cake comes out clean. Cool and ice with cream cheese icing.
    5. To make icing: In a medium bowl, beat cream cheese until smooth. Add milk and vanilla and mix in. Add icing sugar and orange or lemon juice. Beat until fluffy.

Love the cake. I didn't make it with rasins or walnuts cause I didn't have any and instead of 1/2 cup shortening I used 1/2 cup vegetable oil. Didn't frost it at all. The cake turned out moist the way I like it and my husband said it was very good also. We have a few apple trees and I make homemade applesauce often and used that. I might add homemade apple butter with the applesauce sometime.  -  12 Oct 2006  (Review from Allrecipes USA and Canada)

This recipe was a hit with my family. I served it to dinner guests and had to give out the recipe because they loved it so much. I changed a few things because I didn't have everything listed. I upped the cinn. to 1 tsp. and omitted the cloves, allspice, walnuts and raisins. I also added 2 eggs instead of one and used cinn. applesause because that's all I had on hand. I added about 4 fresh cubed macintosh apples and I didn't have the ingredients for the frosting so I coated the top with confectionary sugar. It was a big hit!!! I am making another one today and I am planning on using the frosting this time. Thanks for the great recipe!!  -  26 Oct 2005  (Review from Allrecipes USA and Canada)
