    These amazing mulberry muffins have fewer calories and fat than many muffins do. They're great as a snack or a light breakfast.

    Serves: 8 

    • 1 1/2 cups (185g) plain flour
    • 1/2 cup (125g) white sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon bicarb soda
    • 1 pinch salt
    • 1/2 cup fat free sour cream
    • 1/4 cup (65ml) skim milk
    • 2 tablespoons apple sauce
    • 1 egg
    • 1/2 teaspoon almond essence
    • 1/2 cup mulberries

    1. Preheat oven to 200 degrees C.Grease 6 jumbo muffin cups or line with paper muffin liners.
    2. Combine flour, sugar, baking powder, bicarb soda and salt. In a medium bowl mix together sour cream, milk, apple sauce, egg and almond essence. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
    3. Bake in preheated oven for 25 to 30 minutes until a toothpick inserted into centre of a muffin comes out clean.
