Baked Potatoes and Anchovies

    This is a smorgasbord recipe known in Sweden as "Mr. Janssen's Temptation". The cream moderates the anchovies and it's very satisfying.

    Serves: 10 

    • 10 large potatoes - peeled and sliced thin
    • 2 onions, peeled and sliced
    • 20 anchovy fillets, drained and brine reserved
    • 1 1/4 cups (300ml) cream
    • 2 tablespoons bread crumbs
    • 2 tablespoons butter

    1. Preheat the oven to 225 degrees C.
    2. Place a layer of sliced potatoes onto the bottom of a large baking dish. Top the potatoes with a layer of sliced onions and then a layer of anchovy fillets. Repeat layers up to the top of the dish, ending with a layer of potatoes on top. Drizzle about 2/3 of the cream over the dish, and the reserved liquid from the anchovies. Sprinkle the breadcrumbs over the top and dot with pieces of butter.
    3. Bake for 30 minutes on the middle rack of the oven. Add the remaining cream and continue baking for another 15 minutes or until the potatoes are tender.

    This was surprisingly wonderful! I wanted to give anchovies another chance after hating them since childhood. I made half a batch, because I knew our kids wouldn't try it. Aside from that, my only tweaks were to saute my onion a little and add some flat-leaf parsley and black pepper. Had it with a nice spinach salad for a really good, inexpensive meal.     I've been living/working in Sweden over the past year and some and I am starting a collection of Swedish recipes for when my Swedish boyfriend and I move to Canada. I figure a little Swedish cooking will help him feel more at home (he's never been to Canada). This recipe is alot simpler than many you find for Janssons Temptation, and suprisingly it tastes just as good as any you can have in Sweden.     This was our first time trying anchovies. As a general rule we like fish, though a couple in the family are not fond of fish. This dish, however, cooked up very mild with a slight taste of fish...but different. Everyone ate it, most had seconds, and I will be cooking it again.
