Peanut Butter and Chocolate Chip Bars

    Delicious peanut butter and chocolate chip bars. These bars are wonderful especially for when you're the parent who has to bring a snack for school!

    Serves: 12 

    • 125g butter
    • 1/2 cup (125g) white sugar
    • 1/2 cup (90g) packed brown sugar
    • 1/3 cup peanut butter
    • 1 egg
    • 1/2 teaspoon vanilla essence
    • 1/2 teaspoon bicarb soda
    • 1 cup (125g) plain flour
    • 1 cup (150g) rolled oats
    • 2 cups dark chocolate chips
    • 1 cup (150g) icing sugar
    • 1/4 cup peanut butter
    • 3 1/2 tablespoons milk

    1. Cream butter, white sugar and brown sugar. Blend in 1/3 cup peanut butter, egg, vanilla and bicarb soda. Add flour and oatmeal. Mix well!
    2. Spread in greased 20x30cm baking pan. Bake at 175 degrees C for 20 minutes. Remove and sprinkle with chocolate chips.
    3. Return to oven and bake for eight minutes. Spread to smooth out chocolate chips. Cool. Mix icing and spread over bars. Refrigerate to set. Cut and eat.
    4. To Make Icing: Mix together 1 cup icing sugar, 1/4 cup peanut butter and 3 1/2 tablespoons milk until it makes a spreadable consistency.

    I found this recipe to be very very sweet. The cookie bar bottom was wonderful and would taste great by itself. The icing and chocolate together seemed too much and made this treat very sweet.     I made these for Christmas, wanted to try something different. I doubled the recipe and used a jelly roll pan. It was excellent.     These bars are great. I did half with the frosting and half without. I would definitely keep the topping. I only used 1/2 the amount of chocolate chips and it was perfect. Will definitely make these bars again  -  05 Feb 2007  (Review from Allrecipes USA and Canada)
