This is a simple and delicious fruit and nut cake. It's actually better made ahead of time as it just gets better and better.


Serves: 12 

  • 500g Brazil nuts
  • 500g pitted dates
  • 3/4 cup glace cherries
  • 500g candied pineapple
  • 3/4 cup (90g) sifted plain flour
  • 3/4 cup (185g) white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3 eggs
  • 1 teaspoon vanilla essence

  1. Preheat oven to 150 degrees C. Line 2 small loaf tins with greaseproof paper.
  2. In a large bowl combine Brazil nuts, dates, cherries and pineapple. Over the fruit and nuts sift the flour, sugar, salt and baking powder. Mix well.
  3. In a small bowl combine eggs and vanilla; beat until foamy. Pour over fruit mixture and mix well. Spoon batter into prepared pans.
  4. Bake in preheated oven for 1 1/2 hours, or until a toothpick inserted into the cake comes out clean.
