    This is a wonderful sweet traditionally reserved for Jewish holidays. Almonds, poppy seeds and tahini make a delicious nut bar.

    Serves: 35 

    • 1/2 cup (125g) white sugar
    • 2 cups (500ml) honey
    • 1 tablespoon tahini
    • 4 cups poppy seeds
    • 3 cups chopped almonds

    1. In a saucepan combine the sugar, honey, tahini and poppy seeds. Stirring constantly, cook the mixture over a low heat until thick, about 30 minutes. Add the nuts and stir well.
    2. Wet a wooden board and pour the mixture onto it. Pat down the mixture with your hands (careful, it's hot) or a wet spatula until about 1-2cm thick. Let cool. Slice with a wet knife into diamond shaped pieces.
