Walnut Mocha Icing

    This recipe makes a lovely coffee-chocolate glaze for a cake. The quantities given here make enough for one 20cm layer cake.

    Serves: 12 

    • 1/3 cup (40g) unsweetened cocoa powder
    • 1/3 cup (65ml) strong hot brewed coffee
    • 3 cups (500g) icing sugar
    • 85g melted butter
    • 1/8 teaspoon salt
    • 1 teaspoon vanilla essence
    • 1/4 cup (30g) chopped walnuts

    1. Combine coffee and cocoa in small bowl of electric mixer. Beat until blended. Add sugar, butter or margarine, salt and vanilla. Beat until blended. Scrape bowl and beat icing until it has a spreading consistency.
    2. Ice the cake and sprinkle with chopped walnuts if desired.

    This recipe was ok, the flavor was good, but it was not what I would call "icing". It was kind of thin, closer to a glaze than icing, I had to add more powdered sugar to get a better spreading consistency.  -  13 Feb 2007  (Review from Allrecipes USA and Canada)


    Delicious! Reminded me a bit of Terimasu! I did, however, make a few alterations! 1) I used esspresso instead of coffee (added amazing flavor... however, almost too much flavor) 2) I mixed the initial ingrediants in the blender for a bit, before adding the confectioners suger a bit at a time 3) I served with a dark chocolate cake, wich, although delicious, proved to be to much.     good flavor but as written doesnt work, i had to add almost double the amount of sugar to get a spreading consistency tried a second batch with about 1/2 the amount of coffee, and didnt melt the butter, and it worked much better  -  12 Sep 2010  (Review from Allrecipes USA and Canada)
