    This cake is so simple and good I sometimes have it for breakfast! As a variation use flavoured yoghurt or add some jam to the mix.

    Serves: 18 

    • 1/2 cup plain yoghurt
    • 1 1/2 cups (185g) plain flour
    • 1 cup (220g) white sugar
    • 1/2 cup (125ml) vegetable oil
    • 3 eggs
    • 1/4 (7g) packet active dry yeast
    • 1/4 cup (45g) icing sugar for dusting

    1. Empty yoghurt into mixing bowl. Add flour, sugar, oil, eggs and yeast (or substitute one teaspoon baking powder) and mix until just combined. Pour into a greased and floured 20cm round cake pan.
    2. Bake for 25 to 35 minutes in a preheated 180 degrees C oven, or until cake is golden brown and middle bounces bake when pushed with your finger. Cool and dust with icing sugar.
