    This is a beautiful cake when decorated with its unusual brown sugar icing. It makes a change from a normal party cake!

    Serves: 18 

    • Cake
    • 1 1/2 cups (330g) white sugar
    • 125g butter
    • 2 eggs
    • 1 cup (250ml) milk
    • 1 teaspoon vanilla essence
    • 2 1/2 cups (250g) plain flour
    • 2 teaspoons baking powder
    • Icing
    • 1 1/2 cups (250g) packed brown sugar
    • 2 egg whites
    • 5 tablespoons water
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla essence
    • Topping
    • 1 tablespoon raisins
    • 125g toasted almonds
    • 315g toasted pecans
    • 20 red and green maraschino cherries

    1. Cake: Beat together the white sugar and butter. Add the eggs and 1 teaspoon vanilla. In a separate bowl combine the flour and baking powder. Add the flour mixture alternately with the milk.
    2. Pour into greased and floured 20x30cm pan. Bake at 180 degrees C for 30 minutes or until cake tests done.
    3. Icing: Beat together with an electric mixer the brown sugar, egg whites, water and salt. Place in a double boiler over rapidly boiling water, stirring constantly. Cook 10 minutes or until icing will stand in peaks. Remove from heat and add 1 teaspoon vanilla. Beat until thick. Spread on cake.
    4. Topping: Place one large raisin in each corner. Then place toasted almonds, toasted pecans, red and green cherries all over the cake.
