You won't believe how good these tiny cheesecakes are. Perfect for weddings and parties! Use any kind of pie filling you prefer.

Serves: 48 

  • 500g cream cheese
  • 3/4 cup (185g) white sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 375g vanilla wafers
  • 400g tinned cherry pie filling

Preparation:15min  ›  Cook:15min  ›  Ready in:30min 

  1. Preheat oven to 180 degrees C. Line miniature muffin tins with miniature paper liners.
  2. Crush the vanilla wafers and place 1/2 tablespoon of the crushed vanilla wafers into each of the paper lined miniature muffin tins.
  3. Cream together with an electric mixer the cream cheese, sugar, eggs and vanilla. Fill each miniature muffin liner with this mixture almost to the top.
  4. Bake at 180 degrees C for 15 minutes. Cool and then top with a teaspoonful of cherry (or any other flavour) pie filling.
