    This is a very quick and simple tuna salad and hard to beat for flavour. The addition of crunchy shoestring chips is what makes it special.

    Ingredients
    Serves: 5 

    • 185g tinned tuna, drained
    • 1 cup grated carrot
    • 1 cup diced celery
    • 1/4 cup minced onion
    • 3/4 cup mayonnaise, or to taste
    • 125g shoestring chips, baked

    Directions

    1. Break the tuna apart in a bowl. Add the carrot, celery, onion and mayonnaise; stir to mix. Fold in the shoestring chips just before serving.

    This was very tasty. I had some shoestring potatoes that were sent over from Canada in a snack trade just itching for a recipe like this. And you know, my kids freaking loved it! I added a little chopped garlic dill to it. Kids ate theirs on bread, I ate mine alone. (Mom's cutting back on carbs, you know.)     Loved it! We omitted the onion and substituted raisins to make it more appealing to our young kids. And, we substituted potato chips for the shoestring potatoes (we didn't have shoestrings). Overall, it's a keeper.  -  21 Feb 2010  (Review from Allrecipes USA and Canada)
