Clam and Pork Soup

    This is an easy microwave soup to make and the ingredients are mouthwatering - clams, mushrooms, white wine and basil.

    Serves: 6 

    • 750g pork mince
    • 1/4 cup (65ml) olive oil
    • 3 cloves garlic, minced
    • 2 onions, chopped
    • 1 green capsicum, chopped
    • 1 bunch chopped fresh parsley
    • 1 teaspoon dried basil
    • 500g fresh mushrooms, sliced
    • 800g tinned whole peeled tomatoes with juice
    • 1 cup (250ml) dry white wine
    • 750 tinned minced clams, drained with juice reserved
    • 1 teaspoon salt

    1. In a large microwave-safe dish microwave mince 5 minutes on high until no longer pink. Remove pork from dish. Stir garlic and olive oil into pork drippings and microwave 1 minute. Stir in onion, capsicum, parsley and basil and microwave 4 minutes, until just tender.
    2. Stir in the mushrooms and cook 2 minutes. Then stir in the tomatoes, wine and reserved clam juice. Cover and cook 10 minutes, stirring once.
    3. Stir in the pork and cook 5 minutes more. Let stand 5 minutes before stirring in the clams and salt. Serve hot.

    I made this on the stovetop. The only thing I changed was.....I steamed 6 dozen Mahogany clams instead of using canned clams. ( strain the broth from steaming the clams through cheese cloth to ensure that there's no sand) and add to soup instead of the clam juice mentioned.
