Basic Biscuits with Choc Chips

    There's no need to get too fancy with a chocolate chip biscuit recipe. This is a favourite of mine that makes soft chewy biscuits.

    Makes: 30 biscuits

    • 250g butter, chilled
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 3/4 cup packed brown sugar
    • 3/4 cup white sugar
    • 1 teaspoon bicarb soda
    • 1/2 teaspoon salt
    • 2 1/2 cups plain flour
    • 1 cup dark chocolate chips

    Preparation:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C.
    2. Mix butter, eggs, vanilla and sugars together. Add dry ingredients and blend well. Mix in chocolate chips.
    3. Drop tablespoon sized pieces dough onto a greased baking tray; bake for 8-10 minutes until edges are browned. Remove from oven before the centre is browned.

    My chocolate chip cookies are always crispy, and I always wanted to be able to make good, soft, chewy cookies... this recipe worked for me! It made good sized, delicious, soft and chewy cookies.     WOW are these the BEST !!! You can actually make the dough into a tube (like the Pilsbury cookie dough) wrap it in wax paper and freeze them to use later. You can cut off what you want frozen to cook a couple of cookies at a time. Or you can put them in a container and freeze them and just scoop out what you want. These cookies do remain MOIST if covered. THANK YOU so very much for the BEST Chocolate cookie recipe I have ever had. PS.... you can substitute nuts, or raisins, etc. instead of the chocolate chips.
