Quick Mediterranean Pasta Salad

This is a very sunny and straightforward Mediterranean style pasta salad, perfect as a tasty light lunch or a side dish at a barbecue.

Serves: 2 

  • 1 cup (150g) macaroni
  • 60g roasted red capsicums, diced
  • 1/4 cup sliced black olives
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon lemon juice
  • salt and pepper to taste

  1. In a small bowl or cup, combine olive oil and chopped garlic. Set aside.
  2. Cook pasta in a large pot of boiling water until al dente. Drain.
  3. Transfer pasta to a medium mixing bowl and add roasted red capsicums, olives and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately.
