This is my mother's easy recipe for date bars. They are perfect as a lunch box snack or served with afternoon tea for guests.

Serves: 24

  • 1 3/4 cups (150g) quick cooking oats
  • 1 3/4 cups (220g) plain flour
  • 1 cup (185g) packed brown sugar
  • 250g butter
  • 1 teaspoon salt
  • 1 teaspoon bicarb soda
  • 2 cups (300g) dates, pitted and chopped
  • 1/2 cup (125ml) water
  • 1/2 cup (125g) white sugar

Preparation:25min  ›  Cook:45min  ›  Ready in:1hour10min

  1. Preheat oven to 180 degrees C. Grease one 20x30cm baking pan.
  2. Combine the oats, flour, brown sugar, butter, salt and bicarb soda. Mix well. The mixture will be crumbly.
  3. In a saucepan over low heat, cook the chopped dates with the water and the white sugar until the pulp is soft and well mixed.
  4. Layer 1/2 of the oat mixture onto the bottom of the prepared pan. Top with the date mixture and then finish off with the remaining oat mixture. Press down slightly on layers to compact.
  5. Bake for 45 minutes or until top crust begins to brown.
