Here's a change from ordinary icing! This recipe uses melted marshmallows to make a deliciously light and creamy icing. Can also be used to fill a sponge roll.
2 egg whites
1 1/2 cups (330g) white sugar
1/3 cup (85ml) cold water
1 1/2 teaspoons golden syrup
1 teaspoon vanilla essence
1 cup miniature marshmallows (mallow bakes)

Combine egg whites, sugar, water and golden syrup in top of double boiler. Beat until mixed well. Place over rapidly boiling water. Beat constantly with electric beater while it cooks for 7 minutes or until it will stand in peaks when beater is raised. Remove from heat.
Stir in vanilla and marshmallows. Beat until they melt.
