Vegan Capsicum Kebabs

Try these delicious herbed vegetable kebabs either on their own, or paired with your favourite meat kebab.

Serves: 4 

  • 12 button mushrooms
  • 2 red capsicums, cut into square pieces
  • 1 green capsicum, cut into square pieces
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • small handful chopped fresh thyme
  • small handful chopped fresh rosemary
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Preparation:30min  ›  Cook:10min  ›  Ready in:40min 

  1. Preheat barbecue for medium heat.
  2. Thread mushrooms and capsicums alternately on skewers.
  3. In a small bowl, mix together olive oil, lemon juice, garlic, thyme, rosemary and salt and pepper. Brush mushrooms and capsicums with mixture.
  4. Brush cooking grate with oil and place kebabs on the barbecue. Baste frequently with oil mixture. Cook for about 4 to 6 minutes, or until mushrooms are tender and thoroughly cooked.
