Lemon Marinated Salmon

    This delicious and healthy fish recipe is at its best if you marinate the fish at least 6 hours. It can either be baked in the oven or barbecued.

    Serves: 4 

    • 4 salmon fillets
    • salt and pepper to taste
    • 1 tablespoon onion powder
    • 1 teaspoon chilli flakes
    • 1/4 cup (65ml) olive oil
    • 1/4 cup (65ml) fresh lemon juice
    • 4 cloves garlic, minced
    • 3 tablespoons balsamic vinegar
    • 2 tablespoons white sugar
    • 2 tablespoons chopped spring onions
    • 2 tablespoons chopped coriander

    1. Season fillets with salt and pepper, onion powder and chilli flakes. Set aside in a baking dish.
    2. In a medium bowl mix together olive oil, lemon juice, garlic, balsamic vinegar, sugar, spring onions and coriander. Pour marinade over salmon; cover and refrigerate overnight or at least 6 hours.
    3. Preheat oven to 230 degrees C.
    4. Arrange salmon on a baking tray. Place in preheated oven and bake for 5 minutes. Increase heat to 260 degrees C, turn fillets and bake 5 minutes more.
