This icing takes a little more trouble to make but is well worth it. Brown sugar, maple syrup (genuine if possible!) and walnuts are a great combination.

1 1/4 cups (200g) packed brown sugar
1/4 cup (85ml) maple syrup
3 tablespoons cold water
1/8 teaspoon cream of tartar
1/4 cup chopped walnuts

Place egg whites, brown sugar, maple syrup, water and cream of tartar in the top of a double boiler over boiling water. Beat with a mixer until icing has a good spreading consistency and will stand in peaks. Remove from heat.
