Heat oil in a large frying pan over medium high heat. Add chicken and cook for 4 to 5 minutes each side.
Add pepper, garlic, onion and stock. Cover and simmer over medium heat until stock evaporates, about 7 to 10 minutes. Stir in pasta sauce then cover and simmer another 10 minutes, or until chicken is cooked.
Sprinkle cheese on top, cover then cook for another 2 to 3 minutes, or until cheese is melted. Serve hot.

I make this for my sons also! I usually just pan fry the chicken, that I have seasoned with italian herbs, salt, pepper and garlic in olive oil. My son also likes for me to sprinkle Parmesan cheese on top of the spaghetti prior to placing the chicken on top. - 08 Oct 2008
