Tomato Mozzarella Chicken

Succulent chicken breast browned in hot oil then simmered in chicken stock and pasta sauce. Topped with grated mozzerlla cheese and cooked until melted.

Serves: 4 

  • 1/2 tablespoon olive oil
  • 4 skinless, boneless chicken breast fillets
  • 1/2 teaspoon freshly ground black pepper
  • 1 clove garlic, crushed
  • 1/2 onion, finely diced
  • 1/2 cup chicken stock
  • 500g jar pasta sauce
  • 125g mozzarella cheese, grated

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Heat oil in a large frying pan over medium high heat. Add chicken and cook for 4 to 5 minutes each side.
  2. Add pepper, garlic, onion and stock. Cover and simmer over medium heat until stock evaporates, about 7 to 10 minutes. Stir in pasta sauce then cover and simmer another 10 minutes, or until chicken is cooked.
  3. Sprinkle cheese on top, cover then cook for another 2 to 3 minutes, or until cheese is melted. Serve hot.

Took shortcuts. The only "work" I had to do was chop up some onion. Everything else I bought was pre-packaged and it made this meal very easy. It even tastes good! - 08 Oct 2008


Made it more kid friendly. I make this for my sons also! I usually just pan fry the chicken, that I have seasoned with italian herbs, salt, pepper and garlic in olive oil. My son also likes for me to sprinkle Parmesan cheese on top of the spaghetti prior to placing the chicken on top. - 08 Oct 2008
